Tsaoussi – Orange wine – Kefalonia
The vines are found at a 55 year old vineyard in Minies, South of Kefalonia and are ungrafted, Tsaoussi is one of the rarest varieties on the island but it has shown that it has great potential. For this reason, Panos Sarris chose it for his Orange wine. Harvest is done on the 31st of August. The wine was fermented with indigenous yeasts and left macerate with the skins for two weeks in stainless steel tanks. The result has a solid structure and very intense aromas of yellow fruits such as quince and citron. Production is limited to around 1000 bottles.
Lygia has a medium orange color and impressive aromas of quince, orange, dried apricot, orange peel, lemon, chrysanthemum, toast,vanilla and clay. Robust and slightly tannic mouth sense with a long aftertaste.
