From Georgas’ series of ancestral method sparkling wines of local Athenian tradition, Yomatari is the word traditionally used for “freshly released” wines.

Vinification: Spontaneously fermented in stainless steel, macerated for 4 days with skins, with a second fermentation in the bottle with the addition of Savatiano grape must, and a few sulfites added at bottling. Fermentation: 1 month natural vinification in temperature controlled environment (inox tank). Maturation: 3 months in bottle. Malolactic is naturally completed in the bottle, no filtration. Certified Biodynamic, Certified Organic

Tasting Notes: Citrus and yellow fruits, subtle salinity and great texture.
