Savatiano – White wine – Spata
Vinification: 5-day skin contact, co-fermentation with fresh local pine resin, no intervention and no addition of sulfites. Fermentation: Natural vinification, co-fermentation with pine resin for 1 month in stainless steel tank in low temperature controlled environment Maturation: 2,5 months in steel tanks. No added SO2. Malolactic is naturally completed in the bottle, no filtration. Certified Biodynamic, Certified Organic
This dry white wine is fermented with pine resin, a traditional method which adds body, aroma, mouth feel and longevity to the native Savatiano grape variety. The Savatiano grapes are grown organically and without irrigation. The pine resin brings a characteristic to the Retsina that truly differentiates this wine from all others. This wine is a perfect match with Mediterranean food.
