From Georgas’ series of ancestral method sparkling wines of local Athenian tradition, Piperato is the word traditionally used for “spicy” wines that got fizzy from releasing too early.
Vinification: Spontaneously fermented in stainless steel, with a second fermentation in the bottle with the addition of grape must, and a few sulfites added at bottling. Fermentation: 1 month natural vinification in temperature controlled environment (inox tank). Maturation: 3 months in bottle. Malolactic is naturally completed in the bottle, no filtration. Tasting Notes: Dark cherry and small fruits, slightly spicy palate with great finesse.
