Gaidouria – White wine – Anafi
Vinification: 90 year old ungrafted, vines. The grapes of Gaidouria from the autochthonous vines are picked, pressed in a basket press and then spend a day in contact with the grape skins. Fermentation done with spontaneous native yeast The wine, ages on the fine lees for 8 months and is bottled unfiltered. No clarification, no filtration.
