Aidani – White wine – Anafi
Vinification: 10 year old ungrafted, vines. The aidani grapes are pressed in a basket press and then spend a day in contact with the skins. Fermentation done with spontaneous native yeast. Fine lees ageing in tank for 8 months. No clarification, no filtration. Just 450 bottles
