The philosophy behind Κostaki Winery is to Produce modern, benchmark wines from Muscat a petits grains. Evmorfia Kostaki is a founding partner of Kostaki Winery. Growing up in Samos, the influence of the vineyard was clear, so she focused on studying about wine. After a Bachelor’s degree in Chemistry, her studies led her to France, Italy and California, where she wrote her thesis while at UC Davis. Her goal for Kostaki Winery is clear; to produce exciting, pure and elegant wines from her favourite grape!
Lorenz Immerfall is the other founding partner of Kostaki Winery. Lorenz comes from Bavaria, but for three years now lives permanently in Samos, Greece. Lorenz holds a B.Sc. in Viticulture and Enology from Geisenheim University in Germany. His passion for wine led him to France and Italy, where he delved into Viticulture and Enology at Master LevelHis goal for Kostaki Winery is to craft wines that redefine the Muscat à Petits Grains variety.
Early Harvest is a Muscat Blanc. The vinification process follows that of wine wines. The grapes are hand harvested from young bush vines in the third Week of August 2023 and pressed directly, without any kind of skin contact. After cold sedimentation (24H), the must is let to ferment with indigenous yeasts at 17C. Once the fermenting reaches 9% ABV, the fermentation is stopped with cooling. The wine is then racked and aged on its fine lees for 7 months (with biweekly batonnage), before being bottled.
Early Harvest is an energetic off-dry white wine. In the glass, it shimmers with a light lemon hue. Inviting aromas of green apple, lime, and citrus dance on the nose, while the crisp acidity beautifully balances the wine’s sweetness.
Lively and versatile white wine pairs effortlessly with a variety of dishes or serves as a refreshing sipper at the bar.
Dry is a Muscat Blanc from Samos. For the vinification process the grapes for this wine are hand-harvested from unirrigated old bush vines in the 4th Week of August 2023. The wine is a blend of different wine-making techniques: 58% Skin contact (cold maceration in stainless steel on skins and stems for 24h@5C before being pressed) – 16% Orange wine (fermented with skins and stems in stainless steel before being pressed on day 15) – 14% Direct press (pressed directly and fermented in stainless steel) – 7% Oak (barrel fermented and matured in new French oak barrels 500L VICARD (medium toast). The different components were fermented with indigenous yeasts, aged on lees with occasional batonnage, and blended in the 2nd week of January. 4 weeks after blending, the wine was filtered and bottled

Alo, is a Muscat Blanc from Samos. For its vinification process the grapes for this wine were hand-harvested from unirrigated old bush vines in the 4th Week of August 2023. The wine is a blend of different wine-making techniques. 88% Direct press (pressed directly and fermented in stainless steel) – 8% Orange wine (fermented with skins and stems in stainless steel before being pressed on day 15)
– 4% Oak (barrel fermented and matured in new French oak barrels 500L VICARD (medium toast). The different components were fermented with indigenous yeasts, aged on lees with occasional batonnage and blended in the second week of January. 4 weeks after blending, the wine was filtered and bottled.
Kostaki Alo is a light and crisp dry white wine. The concept behind Alo was to craft a wine that suitable for any occasion. It offers delicate scents of green apple, citrus, and a touch of yeastiness on the nose. While the acidity is lively, it is harmoniously balanced by a hint of residual sweetness.
