The history of the Estate is one of the oldest in Greek wine going back to 1840. Today Kostis Dalamaras, 6th generation, is of the most promising young producers makes this wine by applying a special technique to mature it. The winemaker does not fill the barrels to the top hence the wine comes into contact with more oxygen, which also gives it its smoky character A legacy of producing exceptional varietal and Xinomavro wines from their organic estate. Fermentation with indigenous yeasts, wines are not filtered to preserve their maximum complexity.
Kapnistos is a refined white wine, aged for 12 months in French oak barrels. With its straw blonde color, kapnistos is made from a blend of Malagouzia and Assyrtiko. It is multi-layered with volume and balance, a complex and rich palette with a citrus and green apple aroma together with honey, caramel, tobacco, vanilla and sweet spice with a controlled oxidizing character. The acidity supports the wine and gives it a pleasant buttery aftertaste. It comes in limited production
It can pair well with mushroom soup, ham, smoked aubergine salad, octopus and grilled squid, Seafood, salads, Cheese, Pork, Fish and nuts. Served at 8-10 °C.
A sour red in which both the traditional and the modern winemaking style of Naoussa are married Light ruby color in the glass, typical of the variety. Medium intensity, evolutionary nose strawberry, cherry, violet ripe plum leading the way and the typical Xinomavros tomato paste soft tannins, balancing acidity and long finish. Black cherry and raspberry combine with cinnamon and allspice as time passes in the glass while smoke and herbal notes of sage gradually emerge. The spicy aftertaste leaves plum and chocolate in the mouth.
Pair with giouvetsi, red meat, creamy & rich sauces, cheeses, cooked meat dishes, sausage, serve at 16-18 °C.
